【炸鸡排】

食材:鸡胸肉、葱姜丝、盐、生抽、蚝油、料酒、炸鸡料、玉米淀粉、面包糠、鸡蛋。

做法:1、准备2块鸡胸肉,去掉表面的脂肪筋膜,冲洗干净,一种操作是把鸡胸肉对半切开,分成为2片,另一种从中间一剖为二,不要切断,成为一个大片,根据个人喜爱来做。

3、碗中打入两个鸡蛋,将鸡蛋打散,倒入一个盘子中,另外一个盘子里面放点玉米淀粉,再准备一个盘子放点面包糠,依次将腌制好的鸡排裹了淀粉,裹鸡蛋液,再裹面包糠,一面粘好后翻面,待两面都充分粘上面包糠后,要用手把鸡胸肉按压几遍,让面包糠和鸡胸肉粘紧,防止炸的时候面包糠脱落。

4、锅中放入多点食用油,开大火烧至5成热时,把鸡胸肉放里边,开小火慢炸,一面炸三分钟,再翻另一面,炸至金黄就可以了,炸的时候火不要太大,火大了会炸糊,把炸好的鸡排放到案板上,切成条根据个人口味,撒上适量番茄酱或者其它佐料,是不是非常简。

【红烧猪蹄】

食材:猪蹄2个、葱节、姜片、冰糖、八角、桂皮、香叶、花椒、小茴香、白芷、肉蔻、盐、生抽、蚝油、老抽、料酒。

做法:1、准备2根猪蹄,表面用火烧一下,再清洗干净,做红烧的猪脚最好用猪前腿,前腿烧出来肉多比较好吃,猪蹄从中间劈开,剁成均匀小块,在家比较难剁,最好让店家帮忙剁好,装入大盆里,并加入少许食盐和适量的清水,抓洗后再冲洗几遍。

2、准备2个葱节,适量姜片,冰糖,小茴香少许,八角2个,桂皮1段,香叶2片,肉蔻1个,白芷1片,花椒少许。

3、把猪脚冷水下锅,加上几块姜片,一个葱节,倒入适量的料酒去腥,水烧开以后打去表面浮沫,焯水3分钟左右,把猪蹄捞出来用清水冲洗干净,沥干水分,锅中倒入少许的油,倒入冰糖,调小火慢慢熬,熬成红棕色时糖油,下入准备好的香料炒香,然后把猪蹄块倒进去,快速翻炒将猪蹄翻炒上色,接着加入清水,将汤汁搅拌均匀。

4、转入高压锅中,然后再往里加入一勺食盐调味,半勺老抽增色,一勺生抽,1勺蚝油,加盖上汽后转小火,焖半个小时左右关火,关火后等气跑完后揭开盖子,翻拌一下,如果汤汁较多,可以锅里收一下汁。

4、锅中加适量食用油,将油温升至7成热下入鸡胗中大火炸,炸至鸡胗表面起硬壳,捞出沥油。油温高炸鸡胗会令表面快速结硬壳,能更好的锁住食材内部水分,炸好后外焦里嫩不干柴,捞出控油放入盘中撒上适量的烧烤蘸料开吃,外焦里嫩,咸香鲜辣,烧烤味十足,越嚼越香。
