【酱油肉】

食材:猪肉、香叶、桂皮、花椒、八角、茴香、冰糖、良姜、生抽、老抽。

做法:

1、做酱油肉用五花肉,前腿肉都是首选,买来的肉不要清洗,只需用刀在猪皮上刮一刮清洁一下表面,然后用高度白酒在五花肉全身擦一擦,给肉清洁消毒,这样猪肉干净还不会坏,味道也更香。

7、风干需要一星期左右的时间,酱油肉看起来干干的,表面出油,摸上去手感硬硬的,就能收回来了,风干之后,酱油肉直接摘下来,放进密封袋进行冷冻保存。

8、做好的酱油肉,颜色红润,咸甜适中,酱香浓郁,肉质紧实,取一块酱油肉,改刀切成薄片,上锅蒸20分钟即可,蒸好的肉咸香适口,软糯不干硬,肥肉的部分越嚼越香。
