【煮毛豆】

食材:毛豆2斤、花椒1小把、香叶4片、八角3个、干辣椒6根、盐1勺半、食用碱2克。

做法:毛豆先不要清洗,先用剪刀将毛豆尾部剪掉,了能使豆子更好入味,以前做的时候头尾都剪掉,经验证明剪一端就足够了, 将毛豆放入盆中,加1勺盐,加入清水浸泡十分钟,搓洗几下后,然后再用水冲洗几遍。

【酥皮绿豆糕】

食材:绿豆、冰糖、蛋挞皮。

做法:1、准备半碗绿豆,挑拣出杂质和坏豆,然后再冲洗干净,放在适量水中浸泡过夜,第二天早上就可以看到大部分绿豆已经胀发,部分皮已经破皮了,泡好的绿豆再冲洗几遍,放入锅中加入适量清水,再根据自己的口味,加适量冰糖,开大火煮到沸后,再调成中小火煮,煮了40分钟后,用手捏一下,很容易就捏碎,绿豆全部开花,水分也变少了,开大火再不停翻炒。

2、绿豆馅炒到水分都大部分蒸发掉,直至绿豆馅可以挂锅铲,能抱成团就行,不用太干了,将绿豆馅分成几个小份,每一个都搓成圆球状,放在一旁备用,从冰箱里取出几个蛋挞皮,趁着还没解冻把蛋挞皮从托里取出,再解冻,这个量我做了大概8个绿豆糕。

3、几分钟后,蛋挞皮解冻变软后,把蛋挞皮的边稍微擀薄点,往里面包裹上绿豆馅,再把收口捏紧,用手整理成正方体,一个鸡蛋取出蛋黄,搅拌均匀,用刷子涂在表面,在撒一些芝麻,空气炸锅提前预热,把绿豆饼放进去。

4、空气炸锅调到200度,放入绿豆糕,烤10分钟,取出再翻个面再烤10分钟,时间到就可以出炉啦,根据自己买的烤箱来调节合适的温度,外皮很酥脆,甜而不腻,软糯清香。
