【榆钱炒鸡蛋】

食材:榆钱、鸡蛋3个、盐半勺。

做法:1、将榆钱中里面的杂质要挑出,小小的榆树叶子可以食用不用扔掉的榆钱一定要用流水多冲洗几遍,野生的榆钱会有一些小虫子之类的,淘洗的时候,在水里放入少许食盐淘洗,可以起到杀虫的效果,然后捞出尽量控干水分。

【榆钱窝窝头】

食材:榆钱、面粉适量、盐、食用碱少许。

做法:1、准备1盆新鲜榆钱,榆钱是榆树上的种子,榆钱成串的生长,形如钱币而得名“余钱”,谐音“榆钱”。榆钱挑拣出叶子和枯枝,清洗的时候尽量多洗几遍,最好在水里放入少许食盐淘洗,然后捞出尽量控干水分。

2、榆钱洗过之后沥干水分放在盆中,加一勺盐和少许食用碱用手揉搓几分钟,榆钱揉搓出一些水分,分次加入面粉,将面粉和榆钱混合抓拌成面絮,再揉成团,如果太干可以加适量清水。

3、手上可以抹点油防粘,然后揪下一坨面,搓成圆形,再做成窝窝头的形状。

4、锅中烧适量水,把窝窝头放到笼屉上,之间留出空隙,防止蒸熟粘连在一起,锅中水烧沸腾上汽后,大火蒸15分钟即可,出锅凉一会,太热吃发粘,晾一会吃起来劲道。

【榆钱煎饼】

食材:榆钱、鸡蛋、面粉、盐、五香粉、清水。
