做法:1、准备1大块肥瘦相间的五花肉,适量干梅菜,干梅菜提前几个小时泡好,节省时间,带皮五花肉用温水洗净,在无油的炒锅中肉皮朝下,在锅中用手来回的擦拭几遍,让肉皮上没处理干净茸毛,五花肉块放入冷水中,加入几片姜片和适量料酒,大火煮开, 捞去浮沫, 再转为小火,一直煮到用筷子很容易的插入进去后关火捞出。

2、炒锅中加少许油,放入适量白糖,小火炒糖色,炒到大泡变小泡,糖色就基本好了,倒入煮好的五花肉上,用手涂抹使肉块上都均匀的沾上糖色。

3、锅里可适量多倒一点油,加热至7成油温,肉块肉皮朝下,入锅炸,把肉皮炸至起泡即可,因为肉里含有大量水份,会到处嘣油,放入五花肉盖上锅盖,炸五花肉时会爆油,小心伤人,捞出迅速入冷水中,或热水中浸泡15分钟。15分钟后,猪皮表面就会起非常漂亮的虎皮,如果肉块太厚,去掉一些,切成大小均匀的片。

4、肉皮朝下码好在碗里,泡好的梅干菜,捞出挤干水份,先切后剁,剁成梅干菜碎,锅中留少许底油,放入姜末,蒜末煸出香味后,放入梅菜碎,小火煸炒,加入少许盐酱油即可。

“红薯蒸碗”一道过年少不了甜品,记得小时侯去吃席,最爱吃这道菜,现在去饭馆也会偶尔点这道菜,口感软糯香甜,寓意生活甜如蜜又好吃。

2、锅内烧油,油温升至五成热时,把红薯块放入锅中,用勺子轻轻地推动让它均匀受热,保持中火火炸5分钟,炸至红薯块定型,用筷子不停翻动,让红薯表皮金黄时,就可以捞出控油待用。

3、锅内加少许清水,放入适量红糖和白糖,开小火翻炒至融化,再加入准备好的醪糟,开锅后淋入适量的水淀粉,做成稍微浓稠的糖汁。

4、炸好的后红薯装入小碗中压实点,把糖汁淋入装好红薯的碗中,不要淋入太多,适量就行。

做法:1、准备一斤左右的五花肉,一个芋头,葱一小段,姜一块,大蒜半头,(五花肉最好选用那种肥瘦相间的地方,做出来口感是最好的)。五花肉皮朝下,放进热锅中,开小火烙一烙,去除猪皮上的残留猪毛和异味,再清洗干净,切成稍微厚点的肉片,切好装入一个碗里面,把葱,姜,蒜切成末和五花肉放在一起,加1勺蚝油,2勺生抽,1勺老抽,1勺豆瓣酱,抓匀腌制20分钟。

2、腌制好的五花肉中,直接往里倒入100克左右的蒸肉粉,再加入少许的清水,将其搅拌均匀。

3、搅拌使每一片五花肉都被蒸肉粉包裹,蒸肉粉也可以自己在家做,糯米,大米,香叶,花椒,八角锅里干炒至米变黄,出锅,用料理机打成粗粉即可。

4、将芋头去掉外皮切大块铺在盘底,还可以放红薯,南瓜等当配菜一起做,这些菜能吸收油脂,可以减少油腻。

5、拌好的五花肉直接把它铺在芋头上面,我用的盘子有点小,最后换成了大一点盘子装,锅中将水烧开,再把盘子放进去,盖上盖子,大火蒸制一个小时,五花肉必须要彻底熟透了,口感肥而不腻,就连皮吃起来都鲜香软糯。
