【凉拌西葫芦】

食材:西葫芦1根、干辣椒5根、蒜3粒、花椒1小撮、生抽2勺、香醋1勺、盐、白糖、鸡精、蚝油、熟白芝麻少许。

2、锅中放入适量的清水,大火烧开后,把西葫芦丝倒入沸水中,焯水30秒后,捞入凉水中过凉,再捞出来把水分沥干待用。

【肉末西葫芦】

食材:西葫芦、肉末、小米椒、葱花、姜末、蒜粒、盐、生抽、老抽、鸡精、料酒、豆瓣酱。

做法: 1、准备2个鲜嫩的西葫芦,用刀去掉头尾,从中间切开,分成四半,削去内瓤,再改刀切成细长条。

2、把切好的西葫芦条放入盆里,放入一勺盐搅拌均匀,然后腌制10分钟杀出水分,再用清水清洗干净,攥干水分。

3、准备一块五花肉洗净,为了方便可以用绞肉机绞成肉馅,我平时喜欢用刀剁成有颗粒的肉末,吃起来口感有嚼劲,3粒大蒜剥皮洗净后切蒜粒,1块生姜切成姜末,2根小葱切成葱花,3根小米椒切成小圈装盘待用。

4、锅倒入一勺食用油,放肉末翻炒发白变色,下入葱花,姜末,蒜粒,小米椒,再加入1勺豆瓣酱,继续翻炒出香味,倒入少许料酒,少许生抽,翻炒肉末上色入味。
