荠荠菜是生长在农村的一种野菜,只有在春季时,才在春寒料峭中静悄悄长出,因此便有了春天“第一野菜”的美誉。还因为荠菜和“聚财”谐音,所以九九第一天吃荠菜,有财源滚滚的寓意。

【荠菜鸡蛋汤】

食材:食材:荠菜适量、鸡蛋2个蒜、虾米少许、盐适量。

做法:1、新鲜的荠荠菜,鸡蛋,小虾米准备好,把荠菜摘掉老叶子,然后用清水冲洗干净,荠菜多冲洗几次。

3、锅里倒入适量油烧热,倒入打散的鸡蛋,快凝固时划散翻炒片刻,加入适量的开水,放入小虾米,水开后再煮5分钟。

【苜蓿拌豆腐丝】

食材:苜蓿400克、豆腐皮1张、干辣椒2根、蒜4粒、半勺盐、2勺醋、2勺生抽、1勺花椒油。

做法:1、准备新鲜的苜蓿,豆腐皮,干辣椒,蒜粒,把苜蓿多淘洗几遍,控一下水分,(苜蓿中有杂草挑拣出来)。

2、烧一锅水,将洗净苜蓿菜放进去,多煮会,苜蓿不好熟,将煮好的苜蓿捞出,过一遍凉水。

3、豆腐皮切成小片,叠放一起切成细丝,将切好的豆腐丝也放入锅中,稍微的煮一下,去除豆腥味捞出。

4、苜蓿投凉后,挤掉水分,干辣椒切碎,蒜切小粒,把苜蓿和豆腐丝装入盆中,放入辣椒碎和蒜粒,锅中烧适量油,烧至滚烫,将热油浇在辣椒碎和蒜粒上激出香味,加半勺盐。

3、加一勺盐 ,半勺五香粉调味,搅拌均匀,不需要添加其它调味品了,加入适量碗玉米面,玉米面也可换成普通面粉,少量分次加,用手使劲揉搓,使面粉和榆钱充分融合,不散能成团就行。
